Even if your favorite team isn't playing in the Super Bowl - even if you don't like football - this unique and yummy wrap will surely score big with your taste buds. Let's see the recipe... What the heck is a jackfruit? It's the largest tree fruit in the world. Why the emphasis on tree? Because the largest fruit in the world is actually a pumpkin (insert loud cheering from Hedgie). Yes, a pumpkin, by botanical terms, is considered a fruit - according to the rule of anything that grows from a flower is a fruit. Now I know what you're thinking... eggplants, tomatoes, peppers.... yep, they all start as flowers. But that's a jar of fun to be opened on another day. Back to the jackfruit. Jackfruit grows in tropical/subtropical regions and is found widely in India and Southeast Asia. Its wood is used for building furniture, housing, and musical instruments, and it is the national fruit of Bangladesh. Side note: Bangladesh is home to the largest mangrove forest in the world, packed with Bengal tigers and spotted deer. Bill's tasty wrap uses jackfruit as the star ingredient, but you can substitute it out for anything of similar texture if you A) don't have access to jackfruit or B) it just isn't your thing. Tuna will work fine. Bill's Jacked Up Buffalo Wrap SINGLE SERVE RECIPE - double or triple as needed Ingredients: 1/4 cup cooked and shredded jackfruit 1/4 cup diced tomato 1 radish, diced 1 green onion, diced 1 tortilla wrap of your choice Fresh lettuce to cover wrap 1/4 cup candied cranberry/walnut/currant topping 1/4 cup finely shredded cheese, or to taste Buffalo sauce to taste Salt and pepper to taste
Chop your candied fruit & nut topping into small bits, roughly the size of your diced radishes. Combine the shredded jackfruit (cooled, if you've just cooked it especially for this recipe), radish, green onion, and topping together in a bowl. Sprinkle with salt and pepper and mix well so that everything is evenly combined. Add shredded cheese (we used sharp white cheddar) and mix again. Add buffalo sauce and mix for a final time - Bill used about a 2 tablespoons of Josh Allen sauce. (The buffalo sauce is what binds all your ingredients together, so be sure to use enough to keep things from rolling out of your wrap.) Next, take your tortilla wrap, lay it flat, and cover in lettuce. Spoon your mixture onto the lettuce. Now is when you want to add your diced tomatoes, and if you wish, some more shredded cheese and... if you're like Bill... some more buffalo sauce. Roll your wrap up and enjoy! Bill isn't overly skilled at this so Earl expertly performed this task by folding the left and right sides in about an inch or so, then rolling upwards from bottom to top. Be sure to tuck the edges in on the last 1-2 inches to keep everything contained in your jacked up wrap. If you are left with any uneaten portions, refrigerate and use within 3 days for optimal flavor.
Best eaten while watching football or researching the Sundarbans mangrove forest.
